Hello everyone… long time no see…
For those of you that are new here, my name is Alexandra and I’ve created this blog because I want to share all my favourite pastry recipes with you. It all started with a short trip to Paris when I fell in love with the city and French pastry. One year later me and my husband and our little golden retriever Sophie packed our bags and moved to Paris because I wanted to study pastry. I got accepted at Ecole Ferrandi and I was the happiest. 6 years later I am still in awe with this magnificent city and all it has to offer and I have decided that I want to share all that I’ve learned with you.

Back to the croissants, they are an indulgence and they always remind me of my first visit to Paris when I bought one and went to enjoy together with a cup of coffee on the Seine. It was spectacular! Almond croissants are soft but crunchy at the same time, oozing delicious almond cream – my favourite weekend treat! Baking these delicious treats is quite easy; you just have to buy simple butter croissants the day before you want to bake them. Old croissants absorb the sugar syrup better. Actually these croissants were invented by bakers as a way to not waste old croissants and give them a second life- a delicious second life.
So let’s start!
Almond croissants - Recipe for 5 pieces

- You will need 5 day old croissants .
- (For the sugar syrup)
- 200 gr sugar
- 600 gr water
- (For the almond cream)
- 60 gr butter (softened)
- 60 gr sugar
- 60 gr almond powder
- 1 egg
- 15 gr flour
- 10 gr dark rhum
- 1/2 tsp vanilla extract
- almond flakes
Instructions
Sugar Syrup
Heat the sugar and the water in a pan until the sugar is dissolved. Set aside.
Almond Cream
Soften the butter. Add the sugar and mix them together.
Add the almond powder and mix.
Add the egg and whisk until the batter gets smooth.
Add the flour, mix and then add the rhum and the vanilla extract. Keep in the fridge.
Fill the Croissants
Cut your croissants in half but not fully so that you can close them back together after you fill them.
Dip your croissants in the sugar syrup on all sides.
Put them on a parchment paper and pipe the almond cream in the middle. Close them and pipe a bit of cream on top of the croissants as well. Top with almond flakes.
Bake at 180’ C for 12 to 15 minutes or until golden brown and crispy.
Let them cool for a few minutes and dust them with powder sugar.
