This week I am going to share with you my go to recipe for peach cobbler. This recipe is simple, easy to make and delicious. The crust is buttery and flaky and the center is full of soft and flavourful peach feeling. Every bite is full of delicious peaches so take advantage of the season and make this incredible desert.
It is also my go to for when I have guests over because it is quite fast to make and I can serve it warm with a scoop of vanilla ice cream on top; the ultimate indulgence and everybody likes it!

- Peach Filling:
- 12 peaches
- 1 cup sugar
- 1/4 cup flour
- 1/4 tsp cinnamon
- pinch of salt
- Topping:
- 1 cup flour
- 1/4 cup sugar
- 1/4 cup brown sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 85 gr butter
- 1/4 cup water
Instructions
Wash the peaches, remove the skin and then cut them in slices. Add the peaches in a baking tray. Mix the dry ingredients for the peach filling (1/4 cups flour, 1 cup sugar, 1/4 tsp cinnamon, a pinch of salt), spread it on top of the peaches, and then mix them gently with two spoons, being careful not to crush the peaches.
For the crumble: in a big bowl, mix the flour, sugar, baking powder and salt. Incorporate the butter with a pastry cutter, or with your fingers, until the mixture resembles wet sand. Add the water and mix it in with a spoon.
Add spoonfuls of the mixture on top of the peaches, spreading it across the entire surface. Optionally, sprinkle a mixture of sugar and cinnamon on top.
Bake at 220C for 30 minutes. Serve while still warm with vanilla ice-cream.
